LoKo was born in 2007 when Boston-area Jews Natan Margalit and Marion Menzin decided that the only way to obtain ethically produced and nutritious kosher meat for their families was to arrange it themselves. That summer we brought together one very open-minded farmer and a willing shochet for our first shechita. Since then we have seen many bumps in the road, weathering the risks of farming and the technical challenges of kosher processing, and reaped rewards we hadn’t anticipated. LoKo is a work in progress and a labor of love. We welcome ideas and we plan to evolve LoKo to meet Boston’s kosher and educational needs.
